Mock Clay Pot Rice

Step one: Wash the rice. In a hot non-stick (or clay) pot, add oil and garlic. Then you can add the rice
Step two: Stir fry the rice until you smell a nutty aromar.
Step three: Add chicken broth or whatever liquid you want. The liquid level is about 1-1.5cm from the top layer of the rice
Step four: Cover and pot, and simmer in slow for about 7 minutes, this is what you will get. However, I did add a little too much water, so, when you checked 7 minutes later, you want to see slightly less water than what is showing. Hey, what do you expect, DH is at school and I made this all by my poor self...
Step five: add your ingredients. We had chicken, mushroom and chinese sausage. You can also add some spring onions and ginger for their aromar. You will need to cook it for another 15-20 minutes to ensure the meats are cooked. If you don't like chicken and mushroom, feel free to use spare ribs w/ black bean sauce.

Look at the complete picture, doesn't it look great? Yes, it taste great too.

DH usually made some type of soy sauce to go with it. This is extremely rough on the sauce:
In a heat sauce pan, add:
2 T oil
2 clove minced garlic
a handful of spring onions
5 T light soy sauce
6-7 T sugar
Make sure you taste this first, this can be very salty!!
